This talk traces the late-nineteenth century emergence of national nutrition in Japan and its continuities with early modern conceptions of dietary health. It aims to reevaluate the claim that Japan’s transformation to a modern hygienic regime entailed a revolutionary realignment of social and epistemological norms to accord with scientific inquiry inspired by the West.
